  • 2 medium carrots, peeled into ribbons
  • 1 cup (70 g) shredded red cabbage
  • 1 lemon wedge, for squeezing
  • 8 kale leaves (about 120 g / 4 oz), chopped
  • 2 cups (300 g / 10 oz) cooked brown rice or quinoa
  • 1 cup (165 g / 5.8 oz) cooked chickpeas or cooked lentils
  • ¾ cup (120 g / 4.2 oz) sauerkraut or other fermented vegetable
  • 2 tbsp (20 g) sesame seeds or hemp seeds
  • Turmeric Tahini Sauce, for serving
