  • 300 g / 10.5 oz fresh cherry tomatoes, halved
  • 1 small can Italian cherry tomatoes

Cheese

  • 3 Tbsp pecorino cheese, grated
  • 3 Tbsp Parmigiano Reggiano, grated

Aromatics and Seasoning

  • 1 Tbsp chili, chopped
  • 2 garlic cloves, crushed
  • A fresh bunch of basil, torn
  • Salt, to taste
  • Black pepper, to taste

Directions

Cook the Pasta

  • 1. Fill a large pot with water and bring it to a rolling boil. Add 1 tablespoon of rock salt, allowing it to fully dissolve.
  • 2. Introduce the Mezzi Paccheri into the boiling water and cook according to the package instructions, usually about 10 minutes. Stir occasionally to prevent sticking.

Prepare the Sauce

  • 3. In a large sauté pan, heat 6 tablespoons of extra virgin olive oil over medium heat.
  • 4. Once the oil is warm, add a splash of water and the crushed garlic cloves. Stir gently.
  • 5. Incorporate the chopped chili and sauté for approximately 30 seconds before lowering the heat and adding the halved fresh cherry tomatoes.
  • 6. Using a tomato crusher or the back of a wooden spoon, press down on the cherry tomatoes to release their juices.
  • 7. Once the juices have released, increase the heat to medium-high and add the canned cherry tomatoes. Press them gently and mix thoroughly.

Season the Sauce

  • 8. Season the mixture with salt and pepper to taste. Tear half of the basil leaves by hand and add them to the sauce, reserving the remainder for garnish.

Combine Pasta and Sauce

  • 9. As the pasta nears readiness, reserve a mugful of pasta cooking water. Strain the pasta and add it directly to the sauce, tossing to combine.

Finish the Dish

  • 10. To achieve a creamier sauce, gradually add some of the reserved pasta water while tossing the pasta.

Serve

  • 11. Remove the pan from heat and mix in the grated pecorino and Parmigiano until well incorporated. Serve immediately, garnished with the reserved basil leaves.
