  • 2 tbsp olive oil
  • 2 tbsp cooking sherry
  • 170 g (6 oz) cremini mushrooms, sliced
  • 240 ml (1 cup) beef stock
  • 2 tbsp beef bouillon granules
  • 180 ml (¾ cup) sour cream
  • 120 ml (½ cup) heavy cream
  • 25 g (¼ cup) grated Parmesan cheese

  • 1. In a large mixing bowl, combine ground beef, parsley, Worcestershire sauce, one clove of minced garlic, onion powder, garlic powder, sea salt, and black pepper. Mix until well incorporated.
  • 2. Form the mixture into 4 evenly sized patties.

Sear the Patties

  • 3. Heat a large sauté pan over medium-high heat. Sear the patties for about 3 minutes per side until browned. Remove from the pan and set aside. (Note: Patties will not be fully cooked at this stage.)

  • 7. Add beef bouillon granules and stir until dissolved.

Finish the Sauce

  • 8. Stir in sour cream, heavy cream, and grated Parmesan. Simmer for 10 to 15 minutes until the sauce has reduced by about one-third and thickened.
