Directions

Searing the Lamb

  • 1. In a large, wide pot, heat the olive oil over medium-high heat. Add the lamb leg and sear for 5-6 minutes, turning frequently, until browned on all sides.

Building the Flavor Base

  • 2. Reduce the heat to medium, add the onions and spring onions, and sauté for 2-3 minutes until softened.

Deglazing and Simmering

  • 3. Pour in the white wine, cooking for 1 minute to evaporate the alcohol. Add enough water to cover the lamb, season with salt and pepper, and bring to a boil.

Slow Cooking

  • 4. Cover the pot and reduce the heat to low. Simmer for approximately 1½ hours, or until the meat is tender.

Incorporating the Greens

  • 5. Add the lamb's quarters to the pot and cook for an additional 15 minutes, until they are tender. Stir in the herbs and cook for 1-2 more minutes.

Preparing the Yogurt Sauce

  • 6. In a medium bowl, whisk together the yogurt and lemon juice. Gradually add some of the cooking liquid from the pot to temper the yogurt, stirring until smooth.

Finishing Touches

  • 7. Pour the yogurt mixture into the pot, stirring well to incorporate and thicken the sauce. Remove from heat and serve.
