Directions

Prepare the Marinade

  • 1. Pierce the skirt steak a few times with a fork.

Toast the Sesame Seeds

  • 2. In a skillet over medium heat, toast the sesame seeds until golden, about 2 to 3 minutes. Transfer to a plate to cool.

Combine Marinade Ingredients

  • 3. In a large bowl, combine the toasted sesame seeds, garlic, cola, soy sauce, brown sugar, sesame oil, 1 teaspoon salt, and ½ teaspoon pepper, stirring until the sugar dissolves.

Marinate the Steak

  • 4. Add the skirt steak, onion wedges, and bacon to the marinade, turning to coat. Cover and refrigerate for 4 hours or overnight.

Grill the Vegetables

  • 5. Remove the steak and onion wedges from the marinade with a slotted spoon and place on a baking sheet. Heat a grill pan over high heat, then grill the onion wedges and Cubanelle peppers, turning occasionally, until charred, about 8 to 10 minutes. Transfer to a platter.

Grill the Steak

  • 6. Grill the skirt steak for 4 to 5 minutes per side for medium rare. Add to the platter with the vegetables.

Prepare the Bacon (Optional)

  • 7. Pat the marinated bacon dry, cut into ½-inch pieces, and cook until crisp. Serve alongside or incorporate into fried rice for a delicious side.
