Directions

Prepare the Cookie Dough

  • 1. Melt the butter in a non-stick pan over medium-low heat, stirring continuously until it turns golden brown and develops a nutty aroma.
  • 2. Reduce the heat to low and whisk in the brown and granulated sugars for 1-2 minutes. Remove from heat and let cool for 5 minutes.
  • 3. Whisk in the egg, egg yolk, vanilla bean paste, and dissolved instant coffee until smooth and creamy.
  • 4. Sift together the flour, salt, baking powder, and baking soda in a separate bowl. Stir in the chopped chocolate.
  • 5. Ensure the wet mixture is not hot, then fold in the dry ingredients in two batches until just combined. Do not overmix.

Prepare the Brownie Batter

  • 6. Preheat the oven to 350°F (175°C) and line a 9x9-inch (23x23 cm) square pan with parchment paper.
  • 7. Melt and brown the butter in a saucepan as done for the cookie dough.
  • 8. Pour the hot browned butter over the chopped dark chocolate in a heat-safe bowl. Let sit for 2-3 minutes, then stir until smooth.
  • 9. Whisk in the dissolved instant coffee and sifted cocoa powder until fully incorporated.
  • 10. In a separate bowl, whisk the eggs and sugar until pale, thick, and fluffy.
  • 11. Gently whisk the chocolate mixture into the egg mixture until combined.
  • 12. Sift in the flour and salt, folding gently until just combined. Stir in the chopped chocolate.

Assemble and Bake

  • 13. Spread about ⅓ of the brownie batter evenly in the prepared pan.
  • 14. Dollop chunks of cookie dough batter over the brownie layer, leaving some brownie exposed. Alternate spoonfuls of brownie batter and cookie dough until all batter is used.
  • 15. Lightly flatten the surface with a spatula and optionally sprinkle additional chopped chocolate on top.
  • 16. Bake for approximately 35 minutes, or until set.

Cooling and Serving

  • 17. Allow the brookies to cool in the pan for at least 20 minutes before slicing and serving.
