Sweet Chilli Sauce

Also known as Thai Sweet Chili Sauce or Asian Sweet Chili Sauce, this versatile condiment is a perfect balance of sweetness, umami, acidity, and heat. Made from red chili peppers, garlic, ginger, sugar, and vinegar, it pairs wonderfully with crispy appetizers such as spring rolls.

Ingredients (Makes 250 ml)
  • 80ml rice vinegar or white wine vinegar
  • 80ml water
  • 100g brown cane sugar
  • 1 tbsp rice wine or dry white wine
  • 1–2 tsp mild chili flakes
  • 1 tsp finely minced garlic
  • 1 tsp finely minced ginger
  • 1 tsp soy sauce
  • 2 tsp cornstarch
  • 1–2 drops red food coloring
Directions
  • 1. Prepare the thickening agent: Dissolve the cornstarch in 1 tablespoon of cold water, stirring until fully combined.
  • 2. Simmer the sauce: In a small saucepan over medium-high heat, combine all ingredients except the cornstarch mixture. Stir frequently and bring to a gentle boil.
  • 3. Thicken the sauce: Once the sugar has dissolved, add the cornstarch mixture while stirring continuously. Cook until the sauce thickens, about 1 minute.
  • 4. Cool & store: Allow the sauce to cool completely before transferring it to an airtight jar. Store in the refrigerator for up to a week.
